Delicious beetroot slaw

If you’ve grown too many beetroot and run out of things to make with it, here is a simple recipe that will surely please – both the eyes and the tastebuds. And beetroot is so good for you.

It’s basically a coleslaw made with raw beetroot plus any other ingredients you fancy – grated apple, carrot, thinly sliced red cabbage. The recipe I use is roughly as below, quantities are not precise but it keeps quite well in the fridge for a week or more if you find you’ve made a bit too much.

Ingredients
2 or 3 medium uncooked beetroot
1 medium carrot optional
1/8 to 1/4 red cabbage, finely sliced
2 small apples optional
good handful of sunflower seeds
a good sprinkle of cumin seeds, toasted in a dry frying pan

Method

  • Using a processor, coarsely grate the beetroot and whatever else you have chosen to put in
  • Transfer to a large bowl, add sliced cabbage and mix with two large forks
  • Add sunflower seeds and toasted cumin seeds
  • Mix thoroughly

Now make the dressing

  • sunflower oil
  • cider vinegar
  • generous shakes of dark soy sauce
  • a couple of tablespoons of orange juice
  • a few good squirts of runny honey

Quantities of the above are really to personal taste. You need a few good glugs of oil and about 1/3 to 1/2 of that quantity of cider vinegar. The other ingredients you can experiment with. I pour them into a cereal bowl and use a small whisk to mix. The dressing is slightly thick. Taste before pouring onto the slaw and thoroughly mixing in. The slaw looks glossy and colourful and tastes delicious!

So, most of the way through January and we’ve only just started a really cold spell, despite all the scaremongering. What a beautiful day it was today! Really lifts the spirits.

Something for your diaries:

Hattens Farm Nurseries will be celebrating their 40th Anniversary in July by filling the weekend of 6–7 July with fun reasons to join them. There will be stalls, music, art, produce, services, plant experts, plants, RSPB and wildlife trusts; plus food, music and activities on both days. Sounds like fun and something for everyone. Put it in your diary now so you don’t forget! More details to follow over the next few months.

Financial help for village history projects

Thanks to the success of her book and Christine Brennan’s generosity, Metfield Books is now happy to consider applications from local individuals for help and/or financial support for future projects. Your project ideas must, in some way, add to the written or photographic history of Metfield.

Profits from Christine Brennan’s book
Christine was adamant from the beginning that she would take no money for herself from book sales but wanted the village and villagers to benefit. This enabled us to price the book very reasonably at £10 a copy.

It was also agreed at the beginning of the project that if there were ever any profits from the book, she would like them to support other local projects that might further our knowledge and memories of Metfield’s history.

Submit your ideas for future projects
We have already given a few copies of the book to local schools and these have been well received. If you work at a local school and would like to have some copies for your library or a school project, or are a local individual with an idea you’d like to discuss with us, do get in touch via the contact form below. Some of the ideas we’ve had so far are:

  • Publishing a small supplement to Christine’s book, to include more photos, information and anecdotes received from readers
  • Supporting appropriate local school history projects
  • Publishing leaflet histories of village houses and buildings
  • Supporting other relevant projects that might come to mind

Please apply below and give a brief description of your idea and how far it has already been progressed. All suggestions will be considered. It should be stressed that we are not necessarily offering to do the work for you but to support you with advice and perhaps a financial contribution.
